THE HEAT IS ON..... what to make?
Well this week has brought us summer temperatures and heat, will be over 30C for days. Not what I like, but just have to make the best of it.
One thing that I have been looking at are some simple , easy recipes to try out. Something cool and easy to make. When the heat is on I usually make a favourite cold cucumber soup and serve with cold cuts, slices of baguette and fresh vegetables.
CHICKEN SALAD with MANDARINES this recipe I use to make ,(before moving here) its DELICIOUS and simple. So when I found a recipe I thought I share it. PS I don't bother with the pears, the mandarines are enough , (it is slightly different to what i remember , the chicken was marinated in the dressing and then cooked.)
- TOSS Romaine, chicken, pears, orange segments, onions, and raisins in large bowl.
- ADD Dressing; mix lightly. Serve immediately.

The recipe has only 4 ingredients so sounds simple to make... and also a yummy treat for a hot summer day like we are having.
