LIFE LATELY Midsummer Fun// Lifestyle

  🎉 CELEBRATION TIME🎈 L ast weekend we celebrated midsummer  which is a big event in the nordic countries. So of course why not celebrate it .  Its not something done  here,  but its a nice way to welcome the summer season. I thought after the last year of lockdowns we could use something to celebrate.  This tradition of midsummer is one I do like.   First you have to go picking wildflowers, for the table or a headpiece.  Set up a fire pit or barbecue for roasting,  and later to sit around and enjoy the night.  Of course there is alway plenty of food, and beer .  One simple treat to make  is a simple bread that is wrapped around a stick  or a hotdog/ frankfurter , then roasted over the open fire.   A simple snack. RECIPE 1 3/4 C white flour 2 tsp sugar 2 tsp baking powder 1/2 tsp salt  5 tbsp.   oil 1/2 C  water NOTE you can also use pizza dough , which ever is your preference.

 THE HEAT IS ON..... what to make? Well this week has brought us summer temperatures and heat, will be over 30C for days.  Not what I like, but just have to make the best of it.  One thing that I have been looking at are some simple , easy recipes to try out. Something cool and easy to make. When the heat is on I usually make a favourite  cold cucumber soup and serve with cold cuts, slices of baguette  and fresh vegetables.  CHICKEN  SALAD with MANDARINES   this recipe I use to make ,(before moving here) its DELICIOUS and simple.   So when I found a recipe I thought I share it.  PS  I don't bother with the pears, the mandarines are enough ,  (it is slightly different to what i remember , the chicken was marinated in the dressing and then cooked.) 1/2  qt.  Kraft  Poppyseed Dressing  1  cups  Frozen orange juice concentrate, thawed  8  qt.  Romaine lettuce, torn into pieces...

WEEKEND Delights // lifestyle

 ITS the  WEEKEND -  hurray!!! So its another weekend, time to relax, catch up on chores or get in touch with friends, watch a movie, bake or play some games. Here are a few things I do enjoy to have or do on the weekends. HEALTHY TREATS My weekend treats for the mornings. usually a nice fresh bake bun , glass of juice milk, sometimes a coffee. But once in a while i will make myself a smoothy. A TREAT using up the bananas that are getting to ripe. A simple treat to make STRAWBERRY BANANA SMOOTHY take some ice cubes, milk, plain yogurt,(or flavoured vanilla), orange juice toss into blender. then ADD fresh fruit i.e. bananas,  strawberries blend at high speed till ice cubes are chopped up. Serve in a tall glass with slice of fresh strawberry  . **You can use whatever fruit you like, raspberries, pineapple, orange, mango or add juice for more flavour. WHAT TO EAT? KEEPING COOL Well the hot days of summer are back! Yesterday it hit a record high of 37.4C (98F approx) in the city. The extreme heat is not pleasant for most of us, though some people don't seem to mind it.   So yesterday I thought no way am I cooking anything! ITS to HOT! One thing one needs in such extreme heat is cool drinks , cool foods and a lot of ice! Here are some of my favourites for the those hot sweltering summer days. Let me know what you think or what is your favourite dish for the hot days. FOODS to COOL  YOU So first off I made fresh lemonade. The favourite drink for summer, or another choice is fruit punch made with sparkling water .  So a tall glass of lemonade  please. GOING FISHY// bon appetite

WELL OUR  HOLIDAYS ARE SOON COMING TO THE END  , THIS TRIP HAS BEEN THE RECHARGE I NEEDED.  A TOTAL UNWINDING AND JUST RELAXING WITH FAMILY. A GET TOGETHER WAS PART OF THE PLAN , SO WE COULD ALL MEET AT A LOCATION THAT WAS SUITABLE FOR EVERYONE. PLUS IT WAS A BIRTHDAY CELEBRATION ALSO. ( TWO BIRDS WITH ONE STONE) I DECIDED TO HAVE A BIRTHDAY BRUNCH  AND GETTING ON MY CHEFS HAT. TRUTH IS I AM NOT KEEN ON FUSSY , TO MANY INGREDIENTS RECIPES. B UT I FOUND A  WONDERFUL CASSEROLE DISH , THAT WAS PERFECT FOR HERE .  TAKING IN THE FACT FISH IS  A VERY BIG PART OF THE DANISH MEAL. SO IF YOU LOVE SMOKED SALMON  AND CHAMPAGNE FOR BRUNCH HERE IS A GREAT SIMPLE RECIPE. SCRAMBLE EGGS SMOKED SALMON CASSEROLE 1 PKG SMOKED SALMON  SLICES 10 -12 EGGS 1/.2 C MILK  BUTTER CHIVES GARNISH SALT PEPPER BEAT THE EGGS AND MILK AND CHIVES TOGETHER. PREHEAT SKILLET, ADD BUTTER TILL MELTED  - POUR IN THE EGG MIXTURE, SCRAMBLE AS IT COOKS...

ITS A HEATWAVE. I don't usually write or share recipes on the blog but with the extreme heat  all i can wish for is cool drinks and cooler food to nibble on. Luckily for me my mom in law is a Great cook and shared her recipe  for a delicious cold soup. And  believe me it is perfect for such a heatwave or anytime in the summer. LE  COOL CUCUMBER SOUP - Refreshing cool soup and simple to make.  1 english cucumber shredded 1 tsp,  vegetable oil 4 cups  cold water 2 or 3 vegetable soup cubes 3 gloves garlic grated fine 1 500ml plain yogurt or plain sour cream - low fat optional  1 tbsp lemon juice to taste pepper  and salt parsley or dill  garnish Shred the cucumber , place oil in pot  and saute the cucumber  and garlic till soft or mussy.
