WHAT TO EAT? KEEPING COOL
Well the hot days of summer are back! Yesterday it hit a record high of 37.4C (98F approx)
in the city. The extreme heat is not pleasant for most of us, though some people don't seem to mind it. So yesterday I thought no way am I cooking anything! ITS to HOT!
One thing one needs in such extreme heat is cool drinks , cool foods and a lot of ice!
Here are some of my favourites for the those hot sweltering summer days.

FOODS to COOL YOU
So first off I made fresh lemonade. The favourite drink for summer, or another choice is fruit punch made with sparkling water . So a tall glass of lemonade please.
RASPBERRY LEMONDADE
RECIPE via Once upon a Chef
INGREDIENTS
- 1-3/4 cups fresh squeezed lemon juice, from 8-12 lemons, strained
- 1/2 pound (8 oz.) raspberries, plus more for serving
- 5 cups water
- 1 cup sugar
- Lemon wedges, for serving
- Fresh mint, for serving
- Combine the raspberries and ½ cup of the lemon juice in a blender; purée until smooth, then pass the mixture through a fine sieve into a large bowl to strain out the seeds (the fastest way to force it through is by pressing a ladle against the strainer in a circular motion). Add the remaining lemon juice, water, and sugar to the bowl and stir until the sugar is dissolved. Taste, then and add more sugar, lemon juice or water if necessary (keep in mind that ice cubes will water it down). Pour into glasses with ice cubes and garnish with lemon wedges, raspberries and fresh mint, if desired. The lemonade will keep in the fridge for a few days.
Another favourite for a hot day, frozen fruit popsicles, Super simple and easy to make
Any natural fruit juice with NO SUGAR my favourite is a mango orange blend, but any flavour will be tasty. I don't add any sugar to these as the fruit juice is naturally sweet.. Simply fill popsicle container with the juice place in freezer to solid, then ENJOY .

The easiest and tasty dish. I like any salad whether its a pasta or a lettuce salad.
You can add just about anything to it, shrimps , all vegetables you like .

COLD CUCUMBER SOUP
This dish is my all time favourite for the summer - first time I had it was when I moved here. I make a large pot of it and fill glass jars up with it to have handy for hot days like now. It is so delicious and fresh , simple to make too.
1 english cucumber shredded
dash of vegetable oil
1 garlic clove crushed
lemon juice to taste.
3.4 cubes vegetable soup dissolved
4cups cold water
2- 500ml sour cream low fat
Shred the cucumber into the pot you will use, add a dash of oil, garlic
sauté over medium heat till the cucumbers are soft. Remove from heat and let cool.
In a cup with water ADD the vegetable cubes heat up in micro to dissolve.
Add it to the pot with the rest of the cold water.
Blend in the sour cream and lemon juice.
Use a hand held blender to puree the mixture.
then place in fridge to get cold.
Serve with slices of baguette bread
Perfect post for the summer! I like all your recipe recommendations. I love pasta salad at restaurants as we don’t have it a lot at home so it makes it a treat. I’ve never tried cold cucumber soup but it looks delectable on the photo. Hope you are having a lovely week. :-) xx
